To distinguish a hard-cooked egg from a raw, place the egg on its side and spin it on a level surface. If it spins well the egg is cooked. Refrigerate hard-cooked eggs in the shell for a week. When cooking smashed eggs the important thing is to lower the heat and cook them slowly. To make meringue separate egg yolks from egg whites and beat the egg whites. The egg is an ingredient which can be used to 'bind' a food, like in pies where it makes the pie pieces more solid.
  Eggs provide vitamin A, protein and various other vitamins and minerals. The egg yolk contains all the fat and cholesterol in an egg. Although eggs contain cholesterol, they should not be excluded from a diet. Some people waste the yolk of an egg and eat only the white, to exclude fat and cholesterol. The truth though is that with the exception of niacin and riboflavin, the yolk contains all of the egg's vitamins A, D and E. The yolk also contains more iron, phosphorus, manganese, iodine, calcium and copper than the white, and it is the part that contains zinc. The egg white contains approx. 20 calories and a yolk approx. 60 calories. Egg shell and yolk color may vary. The color of the yolk depends on the diet of the hen and not of its nutrient value and quality. Usually the shell of eggs, which come from hens that live a more natural and healthy life, is removed harder and breaks in many pieces. The shell of eggs, which come from hens that grow in an industry, is easily removed.
